Hope you’ve all recovered from the excesses of the end of last Year and are enjoying the start of a new one.
What to eat in January?
I know that I usually talk about using local produce, but in January we could make an exception:
exotic fruit are great for this time of year:
They give you lots of needed vitamins, they have bright cheerful colours and there is hardly anything local that’s as exciting in taste at this moment.
How about a fruit salad with mango and pineapple?
How about a pavlova with Kiwi?
How about yoghurt with passion fruit?
One of my favourite tropical fruits is the pomegranate. It’s very diverse and because of its slightly tart taste can be used in sweet and savoury dishes alike.
Easiest ways to get the kernels out is by cutting the fruit in half, putting it upside down in your palm and gently tap the top with a wooden spoon: the kernels should fall into your palm or through your fingers into the bowl without effort.
I love to sprinkle it over salad or to decorate desserts.
If you want a drinks idea for the upcoming Valentines next month: sprinkle some into a glass of bubbly and they’ll appear as pink pearls in the glass.
